Gobble Gobble Gobble 2: The Turkey's Revenge!!
Thanksgiving's just around the corner and what are you going to do to make that extra special turkey this year? Last week we introduced you to a technique known as flavor injection, a pretty simple and effective way to marinate larger cuts of meat. This week's technique is just as delicious and versatile.
Turkey Rub
25 medium whole bay leaves
3 tbsp. Creole seasoning
3 tsp. dried thyme
3 tsp. dried oregano
2 tsp. garlic powder
2 tsp. onion powder
1 1/2 tsp. black peppercorns
Procedure: In a spice grinder, or a clean coffee grinder, grind the bay leaves to a fine powder and place in a small bowl. Grind thyme, oregano and peppercorns similarly. Add all ingredients to the bowl and mix together. Divide into three equal parts. Rub one part on the inside of the turkey. Rub the second under the skin around the breasts. Rub the last portion over the outside of the turkey. Refrigerate overnight. Cook as you normally would.

What a tasty way to treat your turkey! But now that we have some good eats, we need some equally good drinks. One of the things I look forward to in the fall is hot apple cider. I just don't think it would be autumn without it.
Happy Apple
2 oz rum
3 oz apple cider
1/2 oz lime juice
Procedure: Combine all ingredients in a shaker half-filled with ice. Shake well and strain into an old-fashioned glass. Garnish with a lime twist.

If you prefer a warm treat, heat cider over low heat and combine all ingredients in a mug. Stir and garnish with a cinnamon stick.

Mmmm! Forget the coffee and tea, hot cider and cinnamon is my preferred way to finish off a delicious meal. I think I'll be stopping by the farmer's market later today to get me a fresh jug.
